A Really Great Marinade

This recipe was given to me years ago by one of my children's teachers. In her former life, she and her husband owned a successful restaurant in Coral Gables, Florida. The marinade is applause worthy with swordfish, halibut, mahi mahi, really any fish of your choosing. It may seem like a laundry list of ingredients, but it's worth the effort.

A Really Great Marinade

1/4 cup orange juice
1/4 cup soy sauce (I use low sodium)
2 tablespoons chopped fresh parsley, or 2 teaspoon dried
1 clove garlic, crushed
1 teaspoon sugar
1/2 teaspoon dried oregano
1 tablespoon lemon juice
2 tablespoons ketchup
1 tablespoon peanut oil

Mix above, adding ketchup and peanut oil last. Pour over fish and let marinate for 30 minutes to an hour in the refrigerator before baking or grilling.

*May be doubled or tripled.
