A Simple Happy First Day of Summer Side Dish!

Cooking doesn't need to be complicated to be good. Sometimes the simplicity of a doctored up box will do. Add as much or as little of the dried fruit and nuts as you wish. I use Near East Couscous Mix with Pine Nuts or Wild Mushroom and Herbs, but any of your favorite brands will do just fine.

Couscous with Dried Fruit and Pistachios

1 box couscous
1 tablespoon orange juice
zest ½ a naval orange
dried cherries
dried apricots, cut up
pistachios

Follow directions on box of couscous. When all liquid is absorbed add zest of orange, orange juice, cherries, apricot pieces and mix together with a fork.  Add pistachios before serving.  May be served hot or cold. Enjoy!
