An Easy Dinner

Chicken, Lemon and Garlic

There is nothing more satisfying than knowing you have dinner marinating in the fridge, even before you've finished your morning tea! And all you need are a few ingredients. This is not rocket science, so please feel free to use more or less of what you like. If you have any fresh rosemary or thyme, they make a nice addition to the marinade as well. A scattering of Italian parsley looks lovely as a finishing touch as you plate your chicken for serving.

3 1/2 to 4 pounds of chicken pieces
1 lemon
2 garlic cloves, peeled and smashed
1/3 cup olive oil (not extra virgin)
sea salt
black pepper

This is embarrassingly easy.  Throw chicken pieces into a large plastic bag. Throw in peeled, smashed garlic cloves with reckless abandon. Cut lemon in half and squeeze in the juice. You can add the empty lemon shells into the plastic bag as well. The more company the better. Pour in olive oil and sprinkle over sea salt and pepper. Zip up your bag and squish and squash the entire contents with as much zest as you can muster. Store in the fridge until you are ready to commence with dinner. Empty the entire contents of the bag into a roasting pan. Bake uncovered at 350 degrees for 45 minutes or until done. It's just that easy!
