This recipe is my gift to you...you are welcome...adapted from Joan Nathan's, The Jewish Holiday Kitchen, 1988. So, easy and delicious, you won't be able to stand it!
TASTY APRICOT CHICKEN
Serves 6-8
Two 3 1/2 pound broiling chickens, cut up
Salt and pepper to taste
Sprinkling of garlic powder
8 ounces apricot preserves
8 ounces bottled Russian dressing
1 cup diced onion
Preheat oven to 350 degrees. Season chicken with salt, pepper and garlic powder. Mix together apricot preserves, Russian dressing and onion. Pour over chicken and bake in oven about 50 minutes, or until golden brown.
