And because it's Tuesday...

...and we're not talking turkey, here's another one of my favorite salmon recipes from Mark Bittman - easy and delicious. And most importantly, omega 3 good for you! I like to use wild king salmon, if available.

LEMON AND HERB GRILLED SALMON

1 1/2 pound skin-on salmon
juice of 1 lemon
2 tablespoons chopped fresh parsley, basil or dill
1 tablespoon olive oil and extra for rubbing over fish
salt
pepper

Heat a grill pan (I use a cast iron skillet) until moderately hot. Stir together the lemon, parsley, 1 tablespoon olive oil and salt and pepper and put aside. Rub over salmon extra olive oil, salt and pepper. Cook skin-side down until the skin is crisp, 4 or 5 minutes. Turn and cook until the fish is firm but still medium rare, another minute or 2. Drizzle with the lemon-and-herb mixture.
