I don't come from the dessert eaters. Don't get me wrong, I like sweets, but it's certainly not a daily ritual. The desserts I make are ones my family and I love to eat for special occasions. It's no secret that we should limit our intake of simple sugars, but sweets are a part of life's ritual for celebration - not to be missed out on!
This recipe is from my mother-in-law, so delicious and there's no heavy lifting required! I'm not sure of it's origin, but it appears by her notes in parentheses that she adapted this dish to her liking. Do not fear the recipe brigade - do as you wish!
BLANCHE'S RICE PUDDING
2 teaspoon butter (or vegetable spray)
1 quart milk
3 eggs, beaten
3/4 cup sugar (Blanche used a little over 1/2 cup)
1 teaspoon vanilla
1/8 teaspoon salt (did not use!)
2 cups cooked rice
1/4 cup raisin (Blanche used 1 cup white raisins)
With butter (or spray) grease well a 3-quart baking dish. In greased dish mix together milk, eggs, sugar, vanilla and salt. Stir in rice and raisins. Bake uncovered in 325 degree oven for 1 1/2 - 2 hours or until set, stirring after first half hour of baking. Serve hot or chilled. Enjoy!
