AVOCADO TOAST WITH SUNNY SIDE UP EGG

This is simply delicious and full of good for you fats, protein and whole-grains!

AVOCADO TOAST WITH SUNNY SIDE UP EGG
serves 4 or 2 hungry appetites

4 extra-large eggs
2 tablespoons unsalted butter
4 slices whole-grain bread, toasted
1 avocado, peeled and mashed
olive oil
salt
pepper

Melt butter in a 10- to 12-inch nonstick skillet set over high heat. When the butter is
melted, crack each egg into hot skillet. Reduce heat to medium. Cooks eggs until whites are set,
about 1 minute or so. I like my whites a bit crisp on the edges with a runny yoke, so my timing is slightly longer, sort of like having your cake and eating it too, but you get the idea.

While eggs are cooking place slices of toast on each plate and top with mashed avocado. Drizzle over olive oil, salt, and pepper. When eggs are finished place on toast with another sprinkling of salt and pepper.

This isn't just for breakfast! It's wonderful for a quick lunch or dinner, with a salad on the side.
