Another Giada De Laurentiis Recipe, Sort Of

You can never have too much love, kindness, or too many salad ideas! This is adapted from Giada Entertains, on the Food Network.

Delicious and easy this features two of my favorites, smoked almonds and apples. I followed directions for the dressing, but since I didn't have arugula I used romaine and spinach. Giada recommended a Fuji or Pink Lady apple, but I only had Honeycrisp. I added a 1/4 cup of raisins for a bit of sweetness. So this is nothing like Giada's, but it's really, really good.

SMOKY ARUGULA, OR ROMAINE AND SPINACH AND APPLE SALAD
Serves 4-6

1 tablespoon whole-grain mustard
1 tablespoon apple cider vinegar
2 tablespoons extra-virgin olive oil
kosher salt
1 apple, thinly sliced, of your choice
5 ounces of baby arugula, or romaine and spinach
1/2 cup chopped smoked almonds
1/4 cup goat cheese, or any creamy crumbly cheese
1/4 cup raisins

Whisk together the mustard and vinegar in a large bowl. Drizzle in olive oil, whisking until the dressing is emulsified. Season with 1/4 teaspoon salt. Add apples to the dressing and toss to coat. Add greens of your choice, smoked almonds and raisins; toss to combine. Add the goat cheese and serve.

Do ahead: Mix the dressing and apples and refrigerate a half hour before serving. Then add rest of the ingredients; toss together and serve!
