I found a lovely box of organic, spiralized butternut squash at Whole Foods this week. I know, I could spiralize my own...cost effective, yada, yada, yada...
Anyway, this is not so much cooking as it is a bit of what my mother would call in Yiddish, "potchka,"* with a little of this, a little of that, and just hope it works out! And it did!
ROASTED SPIRALIZED BUTTERNUT SQUASH
I package spiralized butternut squash (10.75 ounce)
olive oil spray
ground turmeric
garlic powder
salt
pepper
Preheat oven 400 degrees. Line a baking sheet with parchment paper. Toss butternut squash onto
pan and blot dry with a paper towel. Spray liberally with olive oil. Sprinkle over turmeric, garlic powder, salt and pepper. Roast in oven for about 20-25 minutes, until some of the edges turn brown.
I add this to farro or toss it on a salad, or eat it as a side dish. So simple, delicious and lovely to look at!
