WHEN LIFE HANDS YOU LEMONS...

OK, so recipe Monday and Tuesday tip, quote, thought, whatever day, distracts me, to a point. But, life still goes on, whether I post a recipe or not. And whether I try to ignore our new normal through denial or sleight of hand, Husband still has Parkinson's disease.

Husband is remarkable in his quest to be the best he can be in spite of his diagnosis. He's become quite a good boxer, an activity I can't say he would have sought out if it weren't for PD.

There are those constant reminders, his left hand tremor and oddities that pop up reminding us life is not exactly what it once was.

But, for each new symptom we say, "It could be worse." And I'm a believer that "When life hands you lemons..."

FRESH LEMONADE

This is from The Barefoot Contessa Cookbook and as Ina Garten writes, this "...is the quintessential flavor of summer..." Refreshingly simple!

Makes 1 1/2 Quarts

1 cup freshly squeezed lemon juice (5 to 6 lemons)
1/2-3/4 cup superfine sugar, to taste
1 cup crushed ice
4 cups water

Place all the ingredients in a blender and process until completely smooth. Serve over ice.
