Another Salad to Love!

AVOCADO SALAD WITH HONEY-LIME VINAIGRETTE

This is from Cooking Light, May 2017. This is not only simple in its preparation, but light and gloriously delicious. And I won't post a recipe I have not tried myself and look forward to eating over and over again!

2 tbsp. Extra-virgin olive oil
1 1/2 tbsp. fresh lime juice
2 tsp. honey
1/4 tsp. kosher salt
1/8 tsp. ground red pepper (I was out and used a sprinkling of black pepper)
1 romaine lettuce heart chopped, about 3 cups
1 cup thinly sliced radishes (about 5 medium)
1 ripe peeled avocado, diced

Add first 5 ingredients in a jar with lid and shake to combine. Pour dressing over remaining ingredients and enjoy!
