Pantry Staples

"What's for dinner?" is a question that plagues most home cooks. And in our house, salads are an easy choice! Here is a list of items that make a great base for whatever you're in the mood for - without much trouble! This may look like a laundry list, but really, once you're accustomed to having your shelves stocked, it's easy!

Pantry:
Nuts and seeds: almonds, cashews, pecans, pistachios, walnuts, pumpkin seeds, sunflower seeds
Dried fruit: figs, dates, raisins, cranberries, cherries
Farro
Wheatberries
Garbanzo beans
Kidney beans
Red wine vinegar
Apple cider vinegar
Balsamic vinegar
Champagne vinegar
Raspberry and/or Fig Glaze
Olive oil
Apples
Avocados
Pears

Add any combination of these together. This is not cooking, as much as a layering together. A large bowl of greens, wheatberries, dried cherries, cashews, sliced pears and balsamic vinaigrette
can be very satisfying and quick! You can even add chicken or fish!

On Sundays, if I'm feeling particularly motivated, I'll boil up a pot of farro or wheatberries and roast a pan of baby carrots and butternut squash for the week. Gardein Chicken, a convenient vegetarian option is always stashed in the freezer. Add to your salad bowl and top with your favorite dressing and dinner is on the table! I admit to occasional laziness and instead of whipping up a vinaigrette, a drizzle of fig glaze is absolutely delicious!
