This is going to completely throw you, since I rarely, if ever, post a pasta dish. But, for those of you who have been loyal followers, you know when Husband is out of town I love nothing better than hunkering down with a giant bowl of pasta. This is hardly a recipe, but a mere suggestion. You may use any pasta you desire, I prefer the nuttiness of whole wheat linguine. But you do as you wish.
Linguine My Way
kosher salt
4 ounces whole wheat linguine
1 tablespoon unsalted butter
garlic powder
grated Parmesan cheese
chopped flat-leaf parsley (optional)
Put a potful of water on to boil. Once it's come to a boil, add salt and pasta. Cook according to package directions. Just before you drain the pasta, remove a ladle of cooking water.
While your pasta drains in a colander add the butter to the hot pan; add the pasta back in, tossing well, adding a tablespoon or more of cooking liquid. Follow with the grated Parmesan and a sprinkling of garlic powder. Toss again; add more cooking water or Parmesan if needed. Transfer the whole kit and caboodle to a bowl and if you've got it stashed in the fridge, a sprinkling of parsley. Enjoy!
