I'm always looking for new salad ideas and I prepared this last night! Delicious, easy, good for you and refreshing! This is adapted from the January issue of Cooking Light magazine.
CITRUS DRESSING
2 tablespoon olive oil
1 tablespoon fresh lemon juice
1 tablespoon fresh orange juice
2 teaspoon Dijon mustard
1/2 teaspoon minced garlic
dash salt and pepper
Whisk all together and set aside in covered container
For salad you will need:
mixed greens, (I used half a container of Orangic Girl mixed greens for 2 servings)
1 sliced avocado
1 naval orange, segmented
1/4 cup slivered almonds, toasted
Place greens on two serving plates and top with avocado and orange segments. Give dressing a good shake and drizzle over salad. Add toasted slivered almonds. Enjoy! Refrigerate any leftover dresser.
