Because It's Monday...

I almost forgot it was recipe Monday. (Since I claim no expertise in cooking, only that I am an expert in eating, I will carry on as long as I can share comforting and tasty dishes for family and friends to enjoy.)

This is one of my all time, full proof, favorite chicken recipes. I cannot even say how many times I've made this. Except for my year of chicken abstinence. And my apologies to chickens everywhere.

My sister-in-law, in her infinite wisdom, gave it to me when I was just a newlywed. I usually marinate the chicken over night, otherwise a few hours will do. You can substitute low sodium soy sauce, if you like.

Cheryl’s Chicken

 Mix:  1 cup orange juice

          ¼ cup soy sauce

          1 garlic clove minced

          1 tablespoon parsley flakes

          ¼ teaspoon ground ginger

Pour over chicken parts in shallow baking pan. 350 degrees for about 1 ½ hours.  Also delicious with Cornish Hens. Bon appetite!
