I use iceberg lettuce, much to the disappointment of the lettuce police, but, trust me when I say, iceberg is the crisply crunchy vehicle for this salad. And to you naysayers, iceberg is an excellent source of vitamins, A, K and C. It is also a good source of thiamin, vitamin B6 and folate. But, please feel free to substitute spinach or baby romaine if you so desire. In the warm summer months this salad is a welcomely refreshing dish!
Orange Almond Salad
1 head of iceberg lettuce (or greens of your choice)
2 finely sliced shallots
2 oranges, segmented
1 sliced avocado
1/4 cup of sliced almonds, toasted
Dressing
In a covered container shake to your hearts content to combine:
1/2 teaspoon salt
1/4 cup of olive oil
2 tablespoons sugar
3 drops of Tabasco
2 tablespoons red wine vinegar
few grains of pepper
Tear lettuce up into bite size pieces. Add the sliced shallots, orange and grapefruit segments. Toss with dressing. Add sliced avocado and sprinkle over toasted almonds. Serves 6.
