Ripe Figs with Feta and Honey
I may be a work in progress, but a girl's got to eat! I found this simple, yet delicious appetizer in the cookbook, The Picnic, Recipes and Inspiration from Basket to Blanket. Here in the steamy heat of Florida, an air conditioned table will suffice.*
Makes 12
6 ripe green or black figs
Twelve 1-inch square of feta cubes
Honey for drizzling
12 mint leaves, thinly sliced
Slice the figs in half lengthwise. Put one cube of feta atop each fig half and place on a platter. Drizzle over honey and sprinkle mint over the top.
*If you are fortunate enough to live in a more picnic friendly climate, put your cheese topped figs in a container and once you are nicely settled on your shade covered blanket, the breeze blowing softly through your hair, you lucky duck, drizzle over the honey and scatter the mint to your hearts content.
